Perfect for lunch or dinner, and ready in under 30 minutes! Gluten-free option included. On a side note, if pressed for time, a pre-made teriyaki sauce can absolutely be used.
Ingredients
- For the Turkey
1 lb ground turkey (93% lean recommended)
1 tbsp olive oil (or avocado oil)
2 cloves garlic, minced
1 small onion, finely diced
1 tbsp fresh ginger, grated (or 1 tsp ground ginger)
- For the Teriyaki Sauce (If pressed for time, pre-made teriyaki sauce can be substituted)
1/4 cup low-sodium soy sauce (or coconut aminos for gluten-free)
2 tbsp honey (or maple syrup)
1 tbsp rice vinegar (or apple cider vinegar)
1 tbsp sesame oil
1 tbsp cornstarch + 2 tbsp water (slurry to thicken)
- For Serving
2 cups cooked brown rice (or white rice/quinoa/cauliflower rice)
2 cups steamed broccoli
1 red bell pepper, sliced and sautéed or steamed
Sesame seeds + chopped green onions (optional garnish)
Directions
- Cook the Rice & Veggies:
Prepare rice according to package instructions.
Steam broccoli and sauté/steam bell pepper until tender-crisp. Set aside. - Make the Turkey:
Heat olive oil in a large skillet over medium heat.
Add onion and garlic, cook until fragrant (2–3 minutes).
Add ground turkey, breaking it apart with a spatula until fully cooked (6–8 minutes).
Stir in ginger. - Prepare the Teriyaki Sauce:
In a small bowl, whisk together soy sauce, honey, vinegar, and sesame oil.
Stir cornstarch slurry into sauce until smooth.
Pour sauce into skillet with turkey. Stir and simmer 2–3 minutes until thickened and glossy. - Assemble Bowls:
Divide rice, turkey teriyaki, and veggies evenly into 4 meal prep containers.
Top with sesame seeds and green onions if desired.
Notes
- Storage:
Store in airtight containers in the fridge for up to 4 days.
Reheat in the microwave for 1–2 minutes before serving.
